Chile has a long viticultural history for a New World wine region dating to the 16th century when the Spanish conquistadors brought Vitis vinifera vines with them as they colonized the region. In the mid-19th century, French wine varieties such as Cabernet Sauvignon and Merlot were introduced. In the early 1980s, a renaissance began with the introduction of stainless steel fermentation tanks and the use of oak barrels for aging. Wine exports grew very quickly as quality wine production increased; Chile is now the fifth largest exporter of wines in the world, and the ninth largest producer. The climate has been described as midway between that of California and France. The most common grapes are Cabernet Sauvignon, Merlot and Carmenère.

Sauvignon Blanc Santa Alicia Reserva

Origin: Maipo Valley, Chile
Grapes: 100% Sauvignon Blanc
Tasting Notes: Pale yellow with greenish tones followed by intense aromas including grapefruit, melon and gooseberry, typical of the variety. The palate is harmonious, with fresh tropical fruit flavours and crisp balanced acidity.
Food Pairing: Ideal with fresh seafood and fish such as sea bass or ceviche.

Cabernet Sauvignon Santa Alicia Reserva

Origin: Maipo Valley, Chile
Grapes: 100% Cabernet Sauvignon
Tasting Notes: Brilliant deep ruby red colour with aromas of ripe fruit, bitter chocolate and spices. The palate has superb concentration with intense cassis flavours and good structure with balanced acidity and soft silky tannins.
Food Pairing: Perfect with red meats, barbecues and a large array of cheeses.

El Cadejo Merlot

Origin: Maipo Valley, Chile
Grapes: 100% Merlot
Tasting Notes: Deep red in colour with delicate tones of violet. Fresh & intense aromas of blackberry fruit & subtle hints of dry grass are evident on the nose followed by rounded tannins on the palate with a pleasant finish.
Food Pairing: Ideal served with Oriental cuisine such as Chinese food, and also great with pasta & white meats.

El Cadejo Cabernet Sauvignon

Origin: Maipo Valley, Chile
Grapes: 100% Cabernet Sauvignon
Tasting Notes: Intense ruby colour with aromas of ripe red fruits with eucalyptus notes. The palate is rounded with sweet tannins; an easy drinking red wine.
Food Pairing: Great accompaniment to pasta dishes and both red and white meats.
